wake and bake.



Orange Cornbread Muffins

*1 cup all-purpose flour
*1 cup cormeal
*1/3 cup sugar
*2 teaspoons baking powder
*1/2 teaspoon baking soda
*1/2 teaspoon salt
*1 cup fat free milk
*2 eggs lightly beaten
*1/4 cup orange juice
*2 tablespoons canola (or other flavorless) oil

1.  In large bowl, whisk together first six ingredients.  In a small bowl, combine the milk, eggs, orange juice and oil, stir into dry ingredients just until combined (batter will be thin).

2.  Pour into greased muffin molds (or muffin liners) and bake at 375° for 18-22 minutes or until a toothpick inserted in center comes out clean.
